These agitators, who have set up shop behind the port of Nice, are far from the hot air breed, indeed they are full of talent! Chef Samuel Victori (former second chef at Passage 53) and his partner painstakingly and skilfully craft dishes rich in texture, flawlessly cooked and subtly seasoned. Local suppliers take the limelight: baker, independent fishermen, market gardener, breeder, potter and florist. Their mentor is Michel Troisgros, and their concept is original, enthusiastic, amusing, disruptive food, served in a lively, buzzy vibe. Attentive, efficient service. We warrant that this is only the beginning of the story.

The November 2024 menu was a delightful culinary experience, showcasing creativity and exceptional flavor combinations. The finger food was an intriguing and delightful assortment of bites that set a perfect tone for the meal. The flowering squash, paired with a fresh, vibrant bigarade sauce, was a wonderful representation of simplicity and elegance. The sea and mountain course stood out as a beautiful harmony of flavors, perfectly blending the essence of land and sea. Following this, the leek mosaic was incredibly flavorful, with the richness of truffle and beef marrow creating a deeply satisfying dish. The apnea poultry was a standout, masterfully combining caponized guinea fowl with San Remo prawns and a tangy salad—a genius combination that delighted the palate. The invitation to travel was a visually stunning dish, with every component thoughtfully presented. The white as snow dessert was equally exquisite, and the final course of sweet kisses offered an interesting balance of sweet and sour flavors to end the meal on a high note. Overall, this menu was a beautifully crafted journey of flavors, textures, and presentation—a true testament to culinary artistry. The final gesture was a take away bag with some of the most delicious madeleine cookies which were a fantastic snack with coffee the next day!

From start to finish, our dining experience was exceptional. My partner and I visited to celebrate his birthday, and the service was impeccable. The chef graciously adapted the set menu to our requests. If you plan to dine at Les Agitateurs, I'd recommend skipping lunch that day. Though the dishes are served in small portions, you will find yourself full by the end, and wasting such divine food feels like a crime. The paired wines were superb, and the desserts were delicious with some unique selections. I appreciated that many dishes came with stories about the ingredients or the inspiration behind them. It was a lovely gesture for the chef to occasionally come to the dining floor to check on his guests. Nothing felt forced or pretentious, making for a truly enjoyable evening. And let’s not forget a goodie bag which we both received at the end of the evening.

It was a wonderful lunch. The wine pairing was also excellent. Dinner was too much for Japanese people, so lunch was the best.

My dinner experience at Les Agitateurs was unforgettable! During the 3,5 hour meal service was perfect, staff were friendly and had a high knowledge about food. Every dish had its own story and all elements were fresh and tasty. It was an experience where creativity and gastronomy came together. It's hard to pick my favorite plate because all were too good. Will be visiting this place every time I visit Nice.
