Fine dining brought to the bar
The main bar offers front-row seats to the culinary ballet of the kitchen: a chorus of chefs so close you could reach out and touch them. The surroundings, meanwhile, are luxurious and welcoming, created by interior designer Chahan Minassian to make your experience just as much of a treat on the eyes as on the palate! On your plate, you’ll find deliciously light fare, carefully crafted to bring you joy. On finer days, the spectacular terrace at the Hôtel Hermitage Monte-Carlo comes into its own, inspired by a Mediterranean garden and looking out across Monaco’s famous old town, Le Rocher.

Yannick Alléno’s menu features a host of culinary delights made with the finest local ingredients, dressed and seasoned like never before, infused with his skill, and guided by his surroundings. Here, the focus is on fresh, seasonal ingredients, freshly-picked and plant-based produce, food & wine pairings, great service, priority, new techniques and more… The chef and his team use the best local ingredients to bring you vibrant, sun-kissed gourmet cuisine. The use of modern techniques such as cold extraction and fermentation, brings a lightness to dishes, and birch sap a natural sweetness to desserts. 4 months agoPavyllon Monte-Carlo, is nothing short of perfection. My recent lunch there was an absolute delight from start to finish. We were fortunate enough to be seated at a table by the window, offering a stunning view of the sea on one side and an intimate look into the kitchen on the other. The combination of the elegant scenery and the open kitchen created a unique and captivating atmosphere that felt both luxurious and welcoming. The service was impeccable—polished yet adaptable. Our server quickly picked up on our relaxed style and adjusted accordingly, making us feel completely at ease while maintaining the high standard you would expect from a Michelin-starred establishment. As for the food, it truly lived up to its one-star Michelin accolade. In short, Pavyllon Monaco offers an exquisite blend of stunning views, exceptional service, and unforgettable cuisine. A must-visit for anyone seeking a memorable fine dining experience in Monaco.

a month agoPavyllon delivered a remarkable dining experience with moments of brilliance, though some dishes fell slightly short of expectations. The Badaboum-style egg was the undeniable highlight of the meal—caviar-infused and utterly delicious. It was one of the best egg dishes I’ve ever tasted, a true masterpiece of flavor and texture. The steamed cheese soufflé, on the other hand, was slightly disappointing. While the concept was intriguing, the watercress overwhelmed the delicate eel sauce, masking some of its potential. The oysters were prepared to perfection, showcasing their natural flavors with just the right balance of freshness and finesse. Similarly, the rainbow trout stood out as a moist, flavorful dish that was executed beautifully. For dessert, the pear conference was a triumph. The meringue was flawless, and the nuts paired perfectly with the creamy ice cream for a harmonious and satisfying finale. The thighs and breasts guinea fowl was perfectly steamed and juicy, though it lacked the depth of flavor that would have elevated it further. Overall, Pavyllon offered a sophisticated dining experience with a few standout dishes, though some elements could have been more balanced. Despite this, the creativity and technique on display make it well worth a visit.

5 months agoFelt a bit disappointed by this Michelin experience. The service was great, the waiters were super friendly and caring. The location was fantastic. We were happy to be sat at the front of the restaurant overlooking the port. However, the food doesn't really warrant the price. Nothing we ate felt like a Michelin restaurant. Originally when we had booked, the tasting menu sounded great, but it looks like in the time between booking and visiting the menu changed for the season. The original menu was more my speed, the one we had experienced was not really in my interest. We had ordered the stuffed zucchini flower (personally my favorite), the vegetable ravioli, seabass, the fowl, and tart chocolate. The waiter kindly brought us the milky cloud dessert on the house which we greatly appreciated.

4 weeks agoA fine dining restaurant, but the dishes are very simple and small. We celebrated a friend's birthday, we expected a little more. They brought her a small cupcake and didn't even say "happy birthday", there was no surprise, although we warned in advance and were ready to pay extra for the service.

2 months agoWhat can I say, I've eaten at many Michelin guide restaurants but this was my first with a star and it lived up to the hype. Being seated at the bar and watching all the chefs work was an experience in itself. Each dish was interesting and delicious. Even foods I wouldn't usually love were outstanding. I had one of the set menus and I'd say it's worth it. It definitely shows that fine dining does not mean you leave hungry, I was absolutely stuffed by the end of the night. The cheese and mushroom souffle was the single greatest dish I've ever eaten. Friendly and attentive wait staff and good knowledge of the wine list.
